Dia 1 na Cozinha com um Strudel de Alheira e Maçã / Day 1 in the kitchen with an "Alheira" and Apple Strudel




E começamos o Dezembro de avental ao peito, mãos na massa e criatividade q.b. O tema escolhido para este Dia 1 na Cozinha foi: "strudels salgados". Fiquei logo entusiasmada. Nunca tinha feito um strudel, nem o famoso de maçã que me faz crescer água na boca sempre que me deparo com ele na blogosfera ou na internet, e já que era estreia absoluta acabei por, literalmente, pôr as mãos na massa: em vez de comprar massa filo, que ficaria deliciosa em qualquer receita de strudel, doce ou salgada, fiz também a massa seguindo a receita que encontrei no blogue "A Cozinha Colectiva". Para o recheio escolhi a combinação alheira e maçã, que é uma combinação que sempre me agradou. O resultado final? Excelente.

Ingredientes:
Massa:
170 gr. de farinha (150 gr. na receita original)
1 ovo
50 gr. de manteiga derretida
3 colheres de sopa de água
1 pitada de sal

Recheio:
1 alheira
1 maçã Fuji
1/2 cebola
1 mão cheia de rúcula
Azeite q.b.

Preparação:
Comece por preparar a massa:
Tradicional (fonte: "A Cozinha Colectiva")
Coloque a farinha numa tigela. Faça uma cratera no centro e acrescente os restantes ingredientes.
Misture com um garfo em movimentos circulares.
Transfira a massa para uma superfície lisa e amasse até obter uma massa elástica. Forme uma bola, cubra e deixe descansar por 15 minutos.

Coloque no copo o ovo, a manteiga, a água e o sal e misture 10 seg./vel. 4.
Acrescente a farinha e amasse 3 min./vel. Espiga.
Transfira a massa para um saco de plástico e deixe repousar por quinze minutos.

Passados os 15 minutos, coloque a massa no meio de um pano limpo, polvilhado com um pouco de farinha e comece a pressionar com os dedos para a massa começar a abrir. Com o rolo da massa estenda-a o mais fino possível, dando a forma de retângulo.
Coloque as mãos quase fechadas por baixo da massa e vá esticando, puxando as mãos em direção opostas, até obter uma massa finíssima, mas sem romper (sim, é um pouco complicado, mas nada de transcendente), mantendo a forma de retângulo.

O recheio:
Retire a pele à alheira e desfaça o recheio com um garfo.
Descasque a maçã e corte em cubos.
Aqueça um fio de azeite numa frigideira e refogue a cebola cortada em meias luas, mexendo de vez em quando até começar a amolecer.
Acrescente a maçã e deixe refogar em lume brando/médio. Quando começar a amolecer, junte a alheira desfeita e envolva. Deixe fritar por 2 ou 3 minutos, mexendo com a colher de pau.
Deixe arrefecer por alguns minutos.

O Strudel:
Pré-aqueça o forno a 180º.
Pincele a massa com manteiga derretida e espalhe o recheio, no sentido do comprimento, deixando uma borda livre nas margens.
Espalhe as folhas de rúcula sobre o recheio.
Volte as bordas do sentido da largura sobre o recheio.
Comece a enrolar o strudel com a ajuda do pano, sem apertar muito.
Transfira o strudel para um tabuleiro untado e pincele com mais manteiga.
Leve a assar durante 30 a 40 minutos ou até a massa estar dourada, pincelando mais 3 vezes com manteiga durante a cozedura.
Retire do forno e deixe arrefecer. Tenha cuidado ao retirar do tabuleiro se a massa tiver ficado fininha para que não rompa.
Sirva com uma boa salada.

Had never made a strudel, not even the famous apple struidel that makes my mouth water whenever I come across with it in the blogosphere or on the internet, and since it was my premiere I ended by literally geting my hands on the dough: instead of buying filo dough, which would be delicious in any recipe for strudel, sweet or salty, I choose to also make the dough following the recipe I found on the blog "A Cozinha Colectiva". For the filling I chose the combination "alheira" and apple, which is a combination that always pleased me. The result? Excellent.
Ingredients:

The dough:
170 gr. all-purpose flour (150 gr. in the original recipe)
1 egg
50 gr. melted butter
3 tablespoons water
1 pinch of salt
The filling:
1 "alheira"
1 Fuji apple
1/2 onion
1 handful of arugula
Olive oil to taste
Preparation:
Start by preparing the dough:
Traditional (source: "A Cozinha Coletiva")
Place the flour in a bowl. Make a crater in the midle and add the remaining ingredientes.
Mix with a fork in circular movements.
Transfer the dough to a flat surface and knead until you get elastic dough. Form a ball, cover and let stand for 15 minutes.
Thermomix (source: Forum Thermomix - récipe placed by Biras)
Put in the cup the egg, butter, water and salt and mix 10 sec. / Level. 4.
Add the flour and knead 3 min./ Level. Cob.
Transfer the dough to a plastic bag and let stand for fifteen minutes.
   
After 15 minutes, put the dough in the middle of a clean cloth, sprinkled with a little flour and start pressing with your fingers to open the mass start. With a rolling pin stretch it as thin as possible, making a rectangle.
Place your hands almost closed down the dough and go stretching, pulling your hands in opposite direction, until a thin crust, but without breaking (yes it is a bit tricky, but nothing transcendent), keeping the rectangle shape. 
The filling:
Remove the skin from the "alheira" and reverse, scraping it with a fork.
Peel the apple and cut into cubes.
Heat some olive oil in a skillet and saute the onion, cuted into half moons, stirring occasionally until beginning to soften.
Add the apple and sauté over low/medium heat. When begin to soften, add the "alheira" mixing with the other ingredients. Fry for 2 or 3 minutes, stirring with a wooden spoon.
Let cool for a few minutes.
The Strudel:
Preheat oven to 180 º.
Brush the dough with melted butter and spread the filling, lengthwise, leaving a free edge on the banks.
Spread the arugula leaves over the filling.
Replace the edges of the width over the filling.
Begin to roll the strudel with the help of the cloth, not tight.
Transfer the strudel into a greased baking tray and brush with more butter.
Bake for 30 to 40 minutes or until pastry is browned, basting with butter plus 3 times during cooking.
Remove from oven and let cool. Be careful when removing from the tray if the dough has been thin so it won`t break.
Serve with a nice salad.
