Marmitas e chips / Lunchboxes and chips

Before anything else, don`t forget the giveaway that is going on here.

The year is almost ending and I have so many posts wating to come out, that I will choose to stick faithfull to the reasons wich makes me pass by here lately: the lucnboxes. It`s not that at home we don´t cook anythinhg else beyond lucnboxes. No, it´s not anything like that at all.The point is that, even between delicious meals, made by D. or myself, it allways ends up missing the photo. Well, but as for the blog the year was "the lunchbox year", it´s with the luncboxes we will end up 2013.

This weekend, after some culinary indolence, I wrap me up, almost literally, to the oven and to Bimby. From the supermarket I took some parnsley that I just had to try, so, as long the oven was turned on to grill a sea bass, and I roasted a vagetables tray anf half a duzen beets. Thes ones, the beets, were peeled and frozen and will have their own post. The vagetables I did this way:

Ingredientes:
1 nabo
1 cenoura
1 pastinaca
1 batata doce
1/2 cebola

Ingredients:
1 turnip
1 carrot
1 parnsley
1 sweet potato
1/2 onion
2 garlic gloves
1  pinch of salt
Olive oil to taste
Some thyme

Preparation:
Peel the vegetables and cut them into thin slices. If you want to serve the vegetables immediately as an accompaniment cut them as thin as possible, so they get crispy, but if not it is preferable the slightly thicker cut to stay soft, since over time they will lose their crispness (but not the taste, I guarantee).
Spread the vegetables on a tray, preferably in a single layer, but if you can not place them as little as possible crammed. Season with salt, crushed garlic, spread the thyme and drizzle with olive oil.
Bake in preheated oven at 180 º.
Watch it. If you make a single layer, turn them as soon they get golden, if not involves it  2 or 3 times with a wooden spoon until they are baked.

How to serve: are irresistible to come out of the oven, but the pot came with a poached egg and aragula.
And for dessert: the new gelatin Tangerine from "Branca de Neve" that I make just with 300ml water and 1 natural yogurt. A cloud of freshness to end the meal.

Marmita pós-festas / After party lunchbox

Last year, my after Christmas lunchbox meals were still a celebration: lamb, pinions and the traditional "farrapo velho", made with the leftovers from Christmas night codfish, were some of the ingredients. This year, as I haven`t ate much as the year before, as I made a smaller selection for the traditional sweets and even cut off the sugar in the french toasts and in "aletria" (sweet angel air pastta"), only I really wanted was to desintoxicate myself, so I forgott the codfish, the lamb, the french toasts, the king-cake and whatever else has sweetened our table, and choose a quite simple meal.

From the Christmas table only the sautée greens in olive oil and garlic, that are a perdition to me, candidly accompanied by carrots, grilled pineapple and some nuts. It seems litle, I know, but today was just enough and the wished lunchbox: did you know taht the pineapple contains a substance called "bromelain" which facilitates digestion? And the most important part of the pineapple is precisely its center, which normally  we throw away.

O prémio é um exemplar do "I Love Marmita".

And how were your lunchboxes today? Do not forget the giveaway running up to the Kings: your tins and suggestions. The prize is a "I Love Marmita".

"I Love Marmita" e um giveaway

SundayDecember 8th, day of lunchboxes. Day of the "I Love Marmita" that almost made me get up by dawn to present myself in the studies of RTP Porto to talk a little about the book on the dayli morning program "Bom Dia". There's always a niggling nervous that seems to dominate us, but the curiosity about a television studio seen from the inside and the professionalism of those who receive us, help to calm doun the mind state, and when we realize the brief interview ran as a coffee conversation.

Then followed, later in the afternoon, a presentation session in "El Corte Inglés" of Vila Nova de Gaia, with the introduction of Chef Luis Francisco, from the School of gastronomy "Segredos & Cozinha" and the company of family (with the great strength that my D. always gives me), friends and many others who identify with the philosophy of the lunchbox.Yes, because the lunchbox is also a philosophy, a way of welfare in regards to food.

It was an exciting, exhausting and happy day. Back home comforted me with a hot cup of tea and a slice of black Irish bread with fresh whole strawberries jam, while flipping through the book again.

I must now begin to prepare Christmas gifts and "I Love Marmita" there-to be present in each small bundle, as some jams prepared in Summer time and the version of Granola that you can found in the book on page 134.

And as we are in time of gifts and without you this book would not have been born, I decided to do a small giveaway. And how can you get one "I Love Marmita"?

Projecto Marmita - Semana 44/2013 / Lunchbox Project - Week 44/2013

The week-end was not particularly devoted to the kitchen. Still, I managed to make a delicious bread that I ended up not having the opportunity to photograph, but eventually will come around, sooner, or later. Once the oven was turned on I baked a butternut pumpkin, cutted in halves and seasoned with salt, garlic and dill (Espiga) and a drizzle of olive oil. The soup turned out to serve the whole week and still kept a dose in the freezer. Also sautéed a few vegetables that I distributed trough the lunchboxes and in the midle of the week cooked half cup of bulgur that used in two lunchboxes and froze the rest. It was a week of light meals, mainly without meat, but very tasty and satiating.

Dia 1 na Cozinha com um Strudel de Alheira e Maçã / Day 1 in the kitchen with an "Alheira" and Apple Strudel

O resultado final? Excelente.

Ingredientes:
Massa:
170 gr. de farinha (150 gr. na receita original)
1 ovo
50 gr. de manteiga derretida
3 colheres de sopa de água
1 pitada de sal

Recheio:
1 alheira
1 maçã Fuji
1/2 cebola
1 mão cheia de rúcula
Azeite q.b.

Preparação:
Comece por preparar a massa:
Tradicional (fonte: "A Cozinha Colectiva")
Coloque a farinha numa tigela.
Coloque no copo o ovo, a manteiga, a água e o sal e misture 10 seg./vel. 4.
Acrescente a farinha e amasse 3 min./vel. Espiga.

O Strudel:
Pré-aqueça o forno a 180º.
Retire do forno e deixe arrefecer.

In English:

So we started December using an apron, hands in the dough and creativity to taste The theme chosen for this "Day 1 in the Kitchen" was: "saltystrudels." I was immediately enthusiastic. Had never made a strudel, not even the famous apple struidel that makes my mouth water whenever I come across with it in the blogosphere or on the internet, and since it was my premiere I ended by literally geting my hands on the dough: instead of buying filo dough, which would be delicious in any recipe for strudel, sweet or salty, I choose to also make the dough following the recipe I found on the blog "A Cozinha Colectiva". For the filling I chose the combination "alheira" and apple, which is a combination that always pleased me. The result? Excellent.
Ingredients:

The dough:
170 gr. all-purpose flour (150 gr. in the original recipe)
1 egg
50 gr. melted butter
3 tablespoons water
1 pinch of salt
The filling:
1 "alheira"
1 Fuji apple
1/2 onion
1 handful of arugula
Olive oil to taste
Preparation:
Start by preparing the dough:
Traditional (source: "A Cozinha Coletiva")
Place the flour in a bowl. Make a crater in the midle and add the remaining ingredientes.
Mix with a fork in circular movements.
Transfer the dough to a flat surface and knead until you get elastic dough. Form a ball, cover and let stand for 15 minutes.
Thermomix (source: Forum Thermomix - récipe placed by Biras)
Put in the cup the egg, butter, water and salt and mix 10 sec. / Level. 4.
Add the flour and knead 3 min./ Level. Cob.
Transfer the dough to a plastic bag and let stand for fifteen minutes.

After 15 minutes, put the dough in the middle of a clean cloth, sprinkled with a little flour and start pressing with your fingers to open the mass start. With a rolling pin stretch it as thin as possible, making a rectangle.
Place your hands almost closed down the dough and go stretching, pulling your hands in opposite direction, until a thin crust, but without breaking (yes it is a bit tricky, but nothing transcendent), keeping the rectangle shape.
The filling:
Remove the skin from the "alheira" and reverse, scraping it with a fork.
Peel the apple and cut into cubes.
Heat some olive oil in a skillet and saute the onion, cuted into half moons, stirring occasionally until beginning to soften.
Add the apple and sauté over low/medium heat. When begin to soften, add the "alheira" mixing with the other ingredients. Fry for 2 or 3 minutes, stirring with a wooden spoon.
Let cool for a few minutes.
The Strudel:
Preheat oven to 180 º.
Brush the dough with melted butter and spread the filling, lengthwise, leaving a free edge on the banks.
Spread the arugula leaves over the filling.
Replace the edges of the width over the filling.
Begin to roll the strudel with the help of the cloth, not tight.
Transfer the strudel into a greased baking tray and brush with more butter.
Bake for 30 to 40 minutes or until pastry is browned, basting with butter plus 3 times during cooking.
Remove from oven and let cool. Be careful when removing from the tray if the dough has been thin so it won`t break.
Serve with a nice salad.

O meu backstage / My backstage

In English:

After so many absences, this week I could not resist and I'm here with the third post. Always on the mood for birthdays. Of course I have to leave here my apology for blogs birthdays that I missed, where I did not manifested my presence or participated in the festivities, but the last few months were a bit atypical and only now I am beginning to re-enter in my normal pace.
Well, then whose birthday is this now? The blog of dear Ondina, the "Coentros e Rabanetes" and what is the gift she ask? A recipe? No. A cooking blog that doesn`t ask a recipe as a present, but, instead, ask us to share our backstage, one corner of the our home where usually we take our photographs for the blog.

So here's mine: after testing all the nooks and crannies of my kitchen I finally surrender to the dining room table. While in the kitchen or have low light or too much light in the dining room have a large window that allows me to enjoy the light of day for many hours and at night I could also make photographs that pleased me in the least, and although I am a true amateur in the labors of photography, this year I ended up buying a ligtbox wich is a simple accessory (except during folding and bagging returned ...) and cheap (on E-bay) and I can take good advantage of artificial light when photographing at night

As for accessories: cloths and doilies, colored cards, wrapping paper, ribbons, boards, bowls, cups ... I am passionate about cooking utensils and the blog is the best excuse I have to buy a colorful mess. Tips for photographing not have. By the contrary, need many tips and also patience and discipline to create scenarios.
Congratulations, Ondina, for another year of "Coentros e Rabanetes"!

Creme de chocolate e queijo fresco / Chocolate cream and cream cheese

Pique as amêndoas e torre numa frigideira.
Pique a ameixa.

Another anniversary to celebrate, this time the first birthday of the blog  "Emoção às Colheradas» and to celebrate the request was a dessert spoon. It was requested, and so it will be. With chocolate, of course, but a special dessert that is not a mousse. It's a delicious chocolate cream and fresh cheese speckled with dried prunes and almonds that brings it an even more greedy flavor. A dessert that really longed to do and it lived up to my expectations.

Torta folhada de curd de laranja e lima - Roll up pie with orange and lime curd

Retire do lume e acrescente a manteiga, batendo bem.

A torta:
Pré-aqueça o forno a 200º.
Deixe arrefecer e sirva.

The "Tertúlia de Sabores" is an indispensable cooking blog in the blogosphere. It is an inspiration to many bloggers, and not only for the starters. Since I joined this little world, I allwys pass by Moira`s kitchen. I like the simplicity with which she receives us. When we walked into the Tertulia we feel at home and delicious meals waitfor us. This year's "Tertúlia de Sabores" celebrate its six birthday. An age that deserves celebration and Moira issued a challenge to this party: let's make a pie. I immediately thought about a pie I made a few years ago and I've been anxious to repeat, but the time to dedicate myself to the kitchen and the blog has been scarce and I came to realize that there I wouldn`t going to be able to participate in the challenge. What a pity, I thought, but deep down I didn`t accepted it and this party never left my head. Today, Sunday, while I was preparing the dessert for  lunch (a simple rolling apple), looked at a sheet of puff pastry that was left and my memory went to a remnant of orange and lime curd (which has filled some delicious pies awaiting publication here). Hummm, a pie does not have to be a complicated recipe, can be a simple, quick and yet delicious, improvisation. After all, Moira, I will atend to your party. I will take an improvisedpie, which suffered from the evil of many pies: the wound is not always perfect ... Once again: congratulations on the magnificent six years of the "Tertúlia de Sabores".

Ingredients:
1 package of puf pastry (used a package of puf pastry squares from "Massa do Dia")
2 eggs
75 gr. sugar
Grated zest form 1 lime
Juice from 1 orange and 2 limes (2,5 dl total)
1 tsp grated ginger  gengibre ralado
2 tbs unsalted butter, cut into tablespoon size pieces, at room temperature
1 tbs cornstarch

The curd (Source: adapted from "Anasbageri" and Dorie Greenspan - Dorie at Fridays)
Traditional:
In a nonstick pan combine sugar, flour, a bit of fruit juice, beaten eggs, grated ginger and half the lime zest.
Mix well so that no lumps are created, add the remaining juice and bring the pan to medium heat, stirring constantly until the mixture begins to thicken. Be sure to stir until you see the bottom of the pan.
Remove from heat and add the butter, beating well.
Pour the cream into a container through a sieve network, and add the remaining lime zest, press a piece of plastic wrap against the surface and refrigerate the cream for about four hours or overnight.
Thermomix (Source: "Sabores de Canela"):
Peel the ginger and remove the peel from the lime (only the outside) with a vegetable peeler.
In the thermomix place the sugar, ginger and lime peel and grate:15sec/Vel. 9.
Add the remaining ingredients, except the butter, and set 8 min /Level. 4/80 º.
Add the butter into the mouth of the lid and blend 2 min./Level. 7.
Pour the cream into a container through a sieve network, and add the remaining lime zest, press a piece of plastic wrap against the surface and refrigerate the cream for about four hours or overnight.

The pie:
Preheat oven to 200 º.
Spread a generous layer of cream in about 2/3 of each sheet of puff pastry and roll up.
Bake for 15-20 minutes or until dough gets golden.
Let cool and serve.

Projecto marmita - Semana 41/2013 - Lunchbox Projecto Week 41/2013

Here is a short summary of the past week. Without the discipline to remember all the snacks, here are just the memories of lunches. Anyway, the snacks always follow the same rule: 2 pieces of fruit, 2 slices of bread, 1 yogurt and tea to drink throughout the day.

Segunda-feira/Monday

From the sunday lunch left a piece of grilled veal with garlic sauce. As it was only médium grilled I cut it into slices and passed again by the hot pan. To counteract the red meat joined it a salad, so this lunchbox consisted of:

Watercress soup and strips of grilled steak with arugula salad, corn, mango and grated carrot.
At night, as finished tidying up the kitchen, I turned on the Thermomix to make a cream of peas to accompany the remaining lunches. I removed from the freezer the lunchbox for the next day.

Terça-feira/Tuesday

Cream of peas and gratin pasta with minced meat and mushrooms (the one that I took out of the freezer) with some cooked broccoli seasoned with olive oil and garlic.

In the evening another small prep: cut a small courgette and a golden apple into cubes, onion in slices and some cherry tomatoes into halves. Seasoned with olive oil and some fennel seed and took microwave in the grill function, maximum power for 15 minutes. Also prepared 1/3 cup of buckwheat according to package directions.

Quarta-feira/Wednesday

Lunch: Cream of peas. Buckwheat salad with 3 strips of ham into pieces, some shredded rotisserie chicken and half of the grilled vegetables.

Quinta-feira/Thursday

Não houve marmita
Congelei o trigo sarraceno.

There was no lunchbox.
 Froze the buckwheat.

Sexta-feira/Friday

Cream of peas. Chicken quiche with a salad composed of the remaining grilled vegetables and a handful of arugula.
